Redesigned Deepfake Assessment Modal for Notaries

Notaries conducting deepfake assessments will now see a redesigned modal that uses numbered steps and chip-style selections instead of a checklist. This update makes the assessment flow clearer and reduces confusion about which actions to take. Menu icons throughout the notary meeting interface have also been updated to align with Proof's current design standards.
